Mexican Quinoa Salad


 

Ingredients

  • 2 cups cooked quinoa, any variety
  • 1 can black beans
  • 1 can corn
  • 1 medium red onion, finely chopped
  • 1 large tomato, chopped
  • 1 red pepper, chopped
  • Optional: 1 avocado, chopped

Dressing

  • 1/4 cup lime juice
  • 2 tablespoons white vinegar
  • 4 cubes Pop & Cook’s Frozen Chopped Cilantro
  • 2 teaspoons sugar
  • 1 cube Pop & Cook’s Frozen Crushed Garlic
  • Salt and pepper
  • 1/2 cup olive oil

Directions

1. Mix salad ingredients together in a large bowl.
2. Mix dressing ingredients together in a separate bowl. Combine with salad just before serving.
